I was trying to follow a retouching tutorial on YouTube (http://youtu.be/bNB9Mepi1VI) when I came across an issue. I am using Photoshop Elements 10, but the person in the video is using a different version of Photoshop. In the video, the narrator goes to the Image button on the bar at the top of the screen, then clicks on Apply Image. This button does not seem to exist in Photoshop Elements 10. This happens at 1:11.
How can I achieve that exact effect i.e. get to that same menu? Is it simply not in my version of Photoshop Elements? Should I use and effect that I drag into the photo from the effects tab on the right?

It seems to me that what she does is to convert the color layer to a greyscale one, apply some kind of "enhance borders" filter and then superpose it to the "color" layer, with the "multiply" option.
You can do in elements, in three steps: duplicate the original image as a separate work file, change its mode to greyscale, apply an enhance borders filter (maybe) to the grey scale image and re-import it into the original file (using once again "duplicate level", using the original image as target file)
In a way, it reminds me a bit of how jpeg compression works (in it, chroma information is down-sampled, at half resolution, against luminance)
Then, while you manhandle the colours, the "details" are kept in the greyscale layer above it .
