I know that by using stacks you can remove an inconsistent item (people say) on top of a consistent background (a town square say) as long as you have enough images (preferably from a fixed point using a tripod) so it can work out the pixels that vary and delete them.
However, surely the opposite must be true and there must be a way of selecting consistant pixels across multiple layers and deleting those, leaving the inconsistant pixels in place - in other works armed with a set of photographs of a street with a few people walking about (and even a photo of the completely empty street) PS should be able to delete the background and isolate the people?
