In my site I'm redirecting everything (http://, www., ) to www.example.com.
Google webmaster tools says: Make sure you add both "www" and "non-www" versions for your site. Also, if you use the HTTPS protocol, add those variations as well.
So I've added all the FOUR versions to google webmaster tools. Is this a correct process?

Yes, that is correct.
However, from now on you only submit sitemaps etc. to www.example.com (your canonical domain).
By submitting all variations of your site to webmaster tools (and verifying them), you are proving ownership, you can specify the preferred domain (if your redirect does fail for whatever reason) and you can make sure that everything is working correctly by periodically checking the reports in these other accounts/versions. ie. making sure that example.com isn't getting indexed, ...for whatever reason.
As of May 23, 2016, you can now group these related properties in a single property set. webmasters.googleblog.com/2016/05/tie-your-sites-together-with-property.html
