For some reason the colours I select in InDesign does apply to the art board. But imported images display the colours correctly as well as the colour selector.

Please see my image attached - I opened Colour picker, selected the eyedropper and selected a blue from "see video on the web" - that same blue shows on colour picker. Once I click OK to apply to another square that blue goes almost purple.

I assume you work in file that is created for WEB.
When you use color picker in InDesing on picture it prompt this little message (unless you clicked to never show it again at some point in the past) that color are based on RGB.

So, it use InDesing RGB profile to probe the photo, that is showing color using picture RGB profile, and then you use that color to in an object.

Now, the color you are seeing in that object is shown in the Indesing selected RGB profile. And that's why it's different than what you see in picture.

The color picker window is not affected by Indesing color space.

Open the "see video on web" in photoshop and color pick the blue and then compare RGB values. If they are identical in what InD picker shows you it's definitely InD color space issue.
